Coast, one of Wales’ best restaurants, has a new Head Chef starting in October.
Tom Hine, who started his career as a kitchen porter in Rick Stein’s famous Padstow restaurant, will be taking over from Will Holland, who has been at Coast since its opening in 2014 and has built a superb reputation for the restaurant. Will has been appointed executive chef at the Atlantic Hotel in Jersey.
For the last eight years Tom has been with his mentor, Michael Caines in Devon; first as a sous chef at Gidleigh Park and most recently as executive head chef at Lympstone Manor. Interestingly, Alliser Barsby Executive Chef at Coast’s sister restaurant, The Grove, Narberth, also worked for Michael Caines at Gidleigh Park.
Tom is the son of a Cornish fisherman with a passion for seafood so will, I am sure, continue producing the consistently superb standard of food set by Will Holland.
